Chocolate Cake
Based on this recipe by Nora Cooks.
This works well for 2 rounds pans or 24 cupcakes.
Ingredients
- Soy milk: 1 cup
- Apple cider or white vinegar: 1 Tbsp
- Flour: 250 g
- Sugar: 250 g
- Cocoa powder: 3/4 cup
- Baking powder: 2 tsp
- Baking soda: 1 1/2 tsp
- Salt: 1 tsp
- Vegetable oil (canola): 1/2 cup
- Applesauce,unsweetened: 2/3 cup
- Vanilla extract (fake is fine): 1 tablespoon
- Boiling water: 1 cup
Steps
- Grease pans. Either two rounds or two cupcake pans (24 cupcakes).
- Preheat oven to 350 degrees.
- Mix soy milk and vinegar and set aside.
- Add flour, sugar, cocoa powder, baking powder, baking soda and salt to stand mixer bowl. Whisk to combine.
- Add the oil, applesauce, vanilla and milk/vinegar to stand mixer bowl mixture. Mix on medium speed with the paddle attachment until combined.
- Reduce speed and pour in the boiling water, continuing to mix into the cake batter until combined. The battery should be very runny.
- Bake for 30-35 minutes, or until a toothpick comes out clean.
- Cool 10 minutes in the pan before removing.
- Let cool completely before frosting.
Notes: - Try using silicon mats or parchment to make the cakes easier to remove? Haven’t had issues with cupcakes, though, as long as they are cooked through and cool a bit before removing.
