Pudding
Based on this recipe by Allrecipes.
This makes enough to fill 4 small pyrex bowls, with a little left over for the cook.
I want to try other flavors at some point. I think using various extracts would do the trick.
Ingredients
- Sugar: 1/3 cup
- Cocoa powder: 1/3 cup
- Cornstarch: 3 Tbsp
- Salt: 1/4 tsp
- Soy milk: 2 1/2 cup
- Vanilla extract: 1 1/2 tsp
Use the good stuff for the cocoa powder! Fake vanilla extract is OK, since the chocolate flavor dominates.
Steps
- Mix dry ingredients in pot using whisk.
- Add a little soy milk and whisk until wet.
- Put over medium heat and slowly add soy milk why whisking.
- Keep whisking until it starts to thicken. It will be obvious!
- Take off heat and spoon into bowls.
- Refrigerate bowls until ready to eat.
I haven’t had issues with skin forming on the pudding like happens with real milk, so techniques like pressing plastic wrap into the pudding surface have been unnecessary.
